In 1821, Thomas Helliwell established one of Canada’s first breweries at Todmorden Mills. Muddy York and beer historian Jordan St. John have attempted to recreate their long-forgotten Old Ale recipe from meticulous diaries kept by the brewery that have survived the centuries. They then aged this beer in a Château Lafite Rothschild Sauternes Barrel for two years.
